This high protein Buffalo bowl is the ultimate weeknight meal or snack when you want something comforting, spicy and satisfying without a ton of prep. Ingredients

  • 1/2 cup fat-free cottage cheese
  • 1-1/2 teaspoons dry bread crumbs
  • 1 teaspoon ranch seasoning
  • 1/2 teaspoon garlic powder
  • 4 ounces shredded cooked chicken
  • 1 tablespoon Buffalo wing sauce
  • 2 to 3 ounces shredded sharp cheddar cheese
  • Optional: Chopped green onions, cucumber slices, mini bell peppers, celery sticks

Directions

  1. Preheat oven to 400°. In a small baking dish, combine the first 4 ingredients until well combined.
  2. In a small bowl, toss chicken in Buffalo sauce. Spoon over cottage cheese mixture; sprinkle with cheese. Bake until golden and bubbly, 15-20 minutes.
  3. Let stand 5-10 minutes before serving with chopped green onions, cucumber slices, mini bell peppers or celery sticks.
