There are certain fast-food items that feel oddly untouchable. Many of them are not really that complicated, but they’re so distinct that trying to recreate them at home feels overly optimistic. Popeyes’s flaky buttermilk biscuits absolutely belong in that category.

A Popeyes biscuit has a very particular magic to it. The outside is golden and just sturdy enough, while the inside stays soft, layered and buttery in a way that makes you reach for a second one before you’ve even finished the first. They taste unmistakably like Popeyes, which is exactly why I had trouble believing a boxed mix could come even close. I assumed they’d be good for a mix. Pleasant enough alongside soup or cowboy chili on a weeknight, but not particularly memorable.

Instead, I made a batch so good that my chef husband took one bite, looked genuinely stunned and confirmed exactly what I was already thinking: Popeyes Homestyle Biscuit Mix deserves a Taste of Home Award.

What are the new Popeyes at-home biscuit mixes?

The new Popeyes biscuit mixes are the brand’s latest grocery-store expansion, bringing its famous biscuits into home kitchens in two varieties: Homestyle Biscuit Mix and Cajun Cheddar Biscuit Mix.

According to Popeyes, the Homestyle version recreates the classic buttery biscuit flavor fans know from the restaurant, while the Cajun Cheddar mix includes cheddar cheese along with Cajun spices and herbs.

My local Walmart had completely sold out of the Cajun Cheddar version when I went shopping, so I only tested the Homestyle mix. After tasting these biscuits, though, I can already tell you I’ll absolutely be going back for the Cajun version the second it’s restocked.

I Used Cold Butter (Instead of Softened Butter) to Make Perfect Biscuits

The box calls for softened butter, which makes sense from an ease-of-use standpoint. Softened butter is simpler to mix in and is less intimidating for anyone who does not regularly make biscuits from scratch. But biscuits are one of those baked goods where technique really matters, and I couldn’t quite bring myself to treat them like a casual stir-together mix.

Because I know a few biscuit tips and tricks, I used the classic biscuit method, which means cutting the cold butter into the dry mix until small pieces of butter are distributed throughout the flour. Those little pockets of butter matter. As the biscuits bake, the butter pockets melt and release steam, helping create a softer, loftier texture.

After adding the liquid, the goal is to mix just until the dough comes together, since overworking biscuit dough can make the finished biscuits tough.

I gently mixed in the water, scooped the sticky dough onto the baking sheet and slid the tray into the oven, still feeling fairly skeptical about the entire thing.

When they started baking, my kitchen filled with the familiar scent of Popeyes biscuits—buttery and savory, with that subtle seasoned-buttermilk smell the restaurant version has. They’re not strongly herby, exactly, but more flavorful than a standard grocery-store boxed mix. By the time I pulled the tray from the oven and brushed the tops with melted butter, my skepticism had begun to dissipate.

I tore one open while it was still too hot to reasonably handle and realized these were not your average boxed-mix biscuits. They were truly delicious. The centers stayed soft and tender, while the edges and bottoms had the kind of buttery crisp finish that’s hard to achieve even with homemade biscuits. They also had that very specific salty richness great fast-food biscuits have, which kept them from tasting like a typical boxed baking mix.

Without saying anything about my own opinion, I walked over to my chef husband and asked for his professional opinion. He took one bite and said, “These are the best biscuits I’ve ever had in my life.”

That is, admittedly, a bold thing to say about a boxed mix from a fast-food chain. But standing there with my own butter-brushed biscuit, I found myself completely agreeing with him.

Where can I get the Popeyes biscuit mixes?

The new Popeyes biscuit mixes are available now at major grocery stores nationwide, including Target, Walmart, Kroger and H-E-B. The mixes sell for about $3.23 to $3.49 per box, depending on the store.

Right now, Popeyes hasn’t described the biscuit mixes as limited-edition, suggesting they’re intended to be a permanent grocery item rather than a seasonal release. Frankly, after tasting these, losing them would feel deeply unfair, especially now that I know a boxed biscuit mix can be this good.
