Smoked Burnt Ends — Boar City BBQ

 

Ingredients

  • 8lb Beef Brisket (Point)
  • Spice Blend (ground coffee, brown sugar, chili powder, salt and pepper)
  • 2 cups cola
  • 2 cups of Vonnie B’s Original BBQ Sauce
  • 1/3 cups brown sugar
  • 2 tbl of Worcestershire
  • Rootbeer for spritzing

Instructions

Preheat the smoker to 250 degrees. Season the brisket and place on the smoker. Cook until the internal temp is 150 degrees. Spritz with Rootbeer every 30-45 mins during this time. Once that dark mahogany bark is formed, wrap in butcher paper and return to the smoker until the internal temp is 185 degrees. Remove from the smoker and cut into ¾ inch pieces, then into cubes. Combine the cola, brown sugar, Worcestershire and heat until reduced by half. Place cubes in a foil pan and toss in the cola mixture and Vonnie B’s Original BBQ Sauce. Return to the smoker for 2-3 hrs until the liquid has caramelized on the burnt ends. Serve immediately for best results.
